About Skylight
Skylight is our brightest cup. It is a light roast of washed Ethiopian, Guatemalan and Brazilian beans, and it drinks the way a good skylight works: plenty of light, no leaks. The blackberry-like acidity comes up front, caramel sweetness rounds it out, and a little plum and black tea hang around at the finish.
Light roasts keep more of the character the beans came in with, which is why Skylight tastes lively instead of smoky. If you usually reach for a dark roast, try it black first before you decide how much milk it needs.
Why we named it Skylight
On a roof, a skylight is a window set into the roof plane to bring daylight into the room below. A good one comes down to the install: the curb and flashing have to shed water around the unit, which is why roofers judge a skylight by whether it was flashed right.
